I use an admin-only space to serve as a project wiki template. For new projects, I use the Copy Space and Copy Page Trees. However, as I change the template over time, is there a functionality that would let me publish changes to the template space and automatically update the existing project spaces (essentially, change control of the template to existing spaces)? Otherwise, I either have projects with previous versions of the template or I have to manually make the changes to each project space.

Excellent job creating template spaces and using them. It seems you really see the advantage to standardizing roll-outs. While you are using templates in the proper manner, something to be away of is the shortcomings you are experiencing. Template are a single points in time create and will not be updated as you update the template. Templates are a single page created in mirror of the template. Once created they are disconnected from the template.
As you stated, if you update the template to a new version, any pages that were created from that template will not receive the update.
There may be an add-on within the marketplace that might allow for what you’re looking for. We would suggest you take a look at the marketplace for Confluence Add-Ons for Documentation.
