I was wondering if it is somehow possible to report the count of users that log in and use the portal vs. users who only use email to get in touch or comment on open tickets.

It would not be a full report, but you can create a JQL filter that uses the Request Channel as a criteria and that will tell you which option was used for ticket creation (portal or email).
Hi Trudy! Thank you so much for pointing me in the right direction! That absolutely did the trick.
I even could export the search filters as csv and was able to provide a nice Report that way.
