How can i give only some permisions tu service desk users? I want service desk users to only have access to one project. I don´t want them to see more projects.

Are you talking about customers or agents?

And where specifically are these users "seeing" other projects?

I am talking about customers. I want the customer only can see the project that have access.

Permissions are in fact at the project level. You simply need to configure access at project settings > permissions. Here is one article that you may find useful - overview-of-jira-cloud-permissions
