Can we add checklist to multiple user stories in one go?

We have issue where in which we need to add DOD checklist for US as we assign it to teams so that the issues can be tracked appropriately

It all depends on which checklist solution you use. If you can share it here, then we can advise better.

Fields are put on the screens for issue types. You can add the field anytime, but it will be for ALL issues of that type in that project. If you make it required the first time you open an existing issue of that type you will need to fill the field.
