View Date Created in Backlog

I am wondering if it is possible to view more than just the title and the reference for each issue on the backlog?

Its my responsibility to prioritise the issues and it would be a lot easier if there was a column picker or similar.

Yes - in the Board Configuration, go to "Card Layout". You can add fields to the Backlog or Active sprints view.
