Why doesn't my issue type appear in the dropdown?

I have an Issue Type Scheme set up that includes a "Sub-Task" issue type. The issue type scheme is associated with a project:

When I go to create a new issue for that project "Sub-Task" isn't one of the available options to pick from:

What gives?

Sub-tasks cannot be created from the Create button, the only way to create a sub-task if from another issue. Please see Creating issues and sub-tasks for more information.
