is it possible to have a general project, and then create children projects to document "versions" (releases) related to it?
I've only tested Atlas, but for this situation you could consider creating a Goal and then associating multiple Projects beneath for the versions you're mentioning. From a tracking standpoint, Goals have multiple levels as parents and children (called sub-goals), where are Projects do not. That said, you can do a bit more with Projects using the Where is work tracked? piece (on the right).
You might be aware, but Atlas is going away. Atlassian Home aka Platform Experiences is essentially the same thing, but it's managed differently for admins.
Thanks, unfortunately my company uses "Goals" to track business/product goals (kind of OKRs) that are included in the Roadmap, so I am not able to use a "Goal" as a parent project with children (sub)projects. But that's a good idea for others!
