what would be the best way to make a proper backup for a Stash instance?
Do I just need to save the home directory or is there something else?

If you're not using an external database, then backing up the Stash home directory is indeed the way to go.
Make sure that Stash is not running when you make the backup.

So what I will do, is create a bash script that stops stash, backup the data and start stash afterwards.
