from what I understand I can upload as many files as I want, as long as they are smaller than 1 Gb. They don't affect the quota, right? How long are these files available?

Looking at your other question I'm wondering whether you're asking about files in Downloads section here rather than in actual Git repository. In that case the answer is not what Mikael mentioned above: there's no limit other than 1 Gb on a single file size. Items in Downloads don't count into the repository size quota.
The files in Downloads remain available as long as repository exists and the files are not manually deleted by the user with write access to that repository.

Bitbucket has a repository soft limit of 1 Gb on the free subscription, meaning everything within the repository cannot exceed that limit. Once you hit 2 Gb, your repository will become read-only and you can only revert the last commit to get below that limit. You also get a file storage that can be used for Git LFS.
