We are in the process of migrating from Cloud based Confluence over to Sharepoint M365, and would be needing access to the existing Confluence Sites after our subscription expires, in order to complete the migration, as well as to validate the data. Does anyone know whether or not our Sites would be accessible for one or more Super Admin's, post expiration? If so, what kind of grace period would we have?

Your site will be available for 15 days after your subscription period has ended, before being deactivated. Please see the Cloud Licensing FAQ for more information.
@douglas.jennings you can also leave your site live but remove all users that no longer need access to limit the cost of maintaining the site. I do not believe there is a minimum number of users for Standard or Professional - but it will take some housekeeping to deactivate all of the unnecessary users.
