I am a complete newbie to creating things in Confluence/Jira.
I have been assigned a project to track the inventory in our equipment closet with a check in/out system.
I am thinking of a Check Out/In page that is linked to a table with the inventory numbers.
Checking in would add 1 to an item's amount, and checkout out would subtract 1 from an item's amount.
What would be the best way to go about this task?

To me, this looks like a typical asset management use case for Jira. Are you tied to a Confluence page or can you also set this up in Jira and just display the items and inventory amount from the Jira issues on a Confluence page.
Very high-level description of a possible solution: Depending on your requirements, your closet and/or inventory would be assets tracked as Jira issues. They include a custom field where you track the available amount/numbers. Check-in/check-out would be workflow transitions that change the amount.
To make this easier and prettier, you can try out an asset management add-on from the Atlassian Marketplace for free, e.g. one of our apps: STAGIL Assets

It depends on what exactly you would like to see on your page. You could use the native Confluence "Jira Issues Macro" to display Jira issues on a Confluence page. Here is the documentation for that: https://confluence.atlassian.com/doc/jira-issues-macro-139380.html

We track our assets in Jira. Each asset is its own Jira issue. If people are checking out assets you could have a workflow transition that changes the status to checked-out or checked-in. From there it would be pretty easy to create a JQL query to show how many of asset type X are checked-in / checked-out. You could also set to a transition screen to require you to put in the person it is checked out to when it is transitioned to checked-out.
