I'd like to make a single space accessible to anonymous users, as a sort of knowledge base for our software product. We have many other spaces that are internal and we do not want available. Can I edit permissions to make a single space anonymously accessible, while protecting the others?

To enable access to your site, you must first allow anonymous access at the site level and then configure space permissions accordingly. If anonymous access is disabled at the site level, you cannot make it publicly accessible for a single space—only logged-in users can access the space.
