Hello,
i'm having trouble figuring out if it's possible to do this in Confluence:
1. Create a board similar to a Kanban and being able to drag and drop the projects between the status boxes.
2. Adding a list item (project) to the board, automatically creates a page for it.
3. Dragging and dropping a project in between status would also change the project status in the corresponding page.
i already suggested Jira, but where i work, the refused Jira usage as it's a bit complicated to employees. Thank you in advance!
Standard Confluence (no Apps added) cannot do this.
If you have both Confluence and Trello, then Confluence supports what you want natively. If Jira is too "complicated", Trello might be a better fit. More information on that here:

I was able to find a Confluence App that might support your needs:
https://marketplace.atlassian.com/apps/1223150/plana-agile-planner-for-confluence?hosting=cloud
Adding this App to your Confluence looks like it will cost about $0.55US per-user/per-month (based on all not-disabled Confluence users). I'm not sure if it will feel less "complicated" to your users. But there is a 30-day free evaluation where you can try it out and see.
Thank you so much for the help :) I'll take a look on Trello!
Kind regards
