I want to know which template is the best one to use for general and specific customer feedback. This is feedback given either written or verbally and is not conducted as a customer interview.
I want to record the feedback, who gave it, when and about which product.

I like to use the Customer Interview Template, this beacuse the already existed useful fields but also the idea behind it; you have keypoints for all people interested (in a TLDR fashion), and a expand where you can write all the notes which will be hidden for those not interested, keeping the page clean and to the point.
Perhaps here you could take some of the templates suggested and create your tailored version towards your case.
Hi @Corrina McElduff ~ I'm not aware of an actual customer feedback template in Confluence but you might want to have a look at the customer-journey-mapping template (it also has a Play: https://www.atlassian.com/team-playbook/plays/customer-journey-mapping ) and tailor it to your needs.
