We currently use AWS to host datacenter confluence, each time we start a new EC2 instance we download confluence from the Atlassian Bitbucket repo, When Confluence 7.19 reaches EOL, will the bitbucket repo be deleted?

Hmm.. I am not sure if something would be deleted. Reaching EOL does not mean that. You mostly lose ability to upgrade and get support.
