I have been playing around with trying to implement some databases for things we were previously using spreadsheets for and have found a lot of use cases that work very well. I have set up a number of DBs and was heavily utilizing the Tag data column type.
Before last week there was an option to toggle "allow new tag creation" on and off for that type of field. I am no longer seeing that as an option, which makes several of my DBs a lot less useful if people can just add whatever tag they want.

Unfortunately, It looks like it may have been removed.
We sent in a help request and it was confirmed today that it is an intentional change to remove "allow new tag creation" and set that as a default. Support mentioned they're working with the Atlassian content team to update the documentation, and that they're going to add a new feature request to restore the functionality that can be voted on.
