Does Confluence support working with multiple excel spreadheets that have linked formulas and data?

Yes it works but only if your using Firefox or Internet Explorer (requirement for being able to edit Excels right from Confluence). And all excells need to be attached to the same document.

In case you edit Excel 1 which is referenced in Excel 2 you'll have to open Excel 2 as well before the updated data will be taken into account. Basically that's pretty normal as that's the same when using Sharepoint or a plain simple File Share.
