I can't say that I've heard of that behavior specifically in Confluence before. Would it be possible for you to get a screen recording of the actions you're taking when this happens, so that we can try to reproduce it? Does it happen in a specific browser, or multiple browsers on your machine?
More generally, I sometimes try putting my cursor at the beginning of a passage, holding down the Shift key, and then clicking at the end of the passage that I want to select. Sometimes this gets around click-drag-release issues with the mouse and selecting text.
You might also be interested to see that you can long-click, holding the cursor down, and move sections as an alternative to copy/paste:
