if i invite users from other domains who work on my project, will they get email notification automatically or does it require a certain licence type?

As when you invite the users, they will get an email invite; if you've or not added license for that user. That's only for invite to instance.
If they are an working with you, and they will be making an update to task in that project, then they would be getting email updates (edit, create if assigned, watcher notification, attachments etc) based on notification scheme of the project - but the catch is they should have license to that instance.
Alternate, if you don't want them to access your instance, spin up automation rule and send mail to those email address based on your requirements.
It does not need a special license. just make sure you add them with the right permissions. If they do not see it tell them to check spam. For more info click into your admin settings for full details on guest access.

thanks, does that mean they will get emails when a doc/file etc is updated, and is MFA enabled on the platform for all accounts do you know?

Notifications depends on the notification schema which you have defined. They can get mail when there is a new attachment. For that they should be in the event.
Similar licence as other users of your instance.
