I will @mention my colleagues and very often they do not reply. I then forget to follow up and the item stays undone. What method can I use in confluence to track my @mentions so that I can then follow up on those that have not been replied to

You can use the Task Report Macro for this. You can create a page on your personal space that has all tasks that were created by you. You can then view this page when you want to see which tasks were not yet completed, and then personally get in touch with those users.
