I thought I was signing up a a free Confluence site that has a limit of 5 team members but is not limited to a 30-day trial. I teach at a community college and cannot get the funding for a regular academic site (which I am still not sure what amounts to with the 75% discount).

you should be able to get completely free Confluence. With Free plan you can have 10 users, but there are some limitations, see here.
Please, navigate to the site administration to the billing part -> Manage subscriptions. Check, which plan is selected here (probably Standard?).
According to this page academic institutions can receive 50% off list price, which means, if you go for Standard plan, instead of $25 / month for 5 users, you would pay $12.5.
