Recently, when I began adding users to my confluence cloud instance, the full names have started to default to email address and ofcourse I can't change the names. As a result many users have a proper name while others are coming up as email address when referenced.
Has anything changed recently? Is there a way I can go back to previous experience?

Atlassian account was rolled out few months back, the named contacts for the account should have received an email pertaining to the changes to the Atlassian Cloud environment with regards to the new Atlassian account. Here's the information:
An Atlassian account allows your users to log in to any of your Atlassian Cloud products with the same email address. This change is for the best, as it improves the login experience of the users to all Atlassian sites, as this streamlines to the login process. This way users will not have to login in each time to Atlassian facing sites, such as, jira.atlassian, support.atlassian, as well as their instances.

With Atlassian Account enabled, the admins will no longer be able to edit the user's Full Name and Email address, as now they will manage on their own through the https://id.atlassian.com.
Therefore, you can perform a domain verification which will allow the admin to manage the Full Name and Email address of the users within that verified domain. You can check more details about the domain verification in below document:

Users can log in to id.atlassian.com and change these details themselves.
