Use the exportPage action with the Confluence CLI Plugin.
You can execute it periodically as a Linux CRON job or Windows service.
Someone would have to write a script to do that automatically.
Any user can (usually) manually export pages as a Word doc. It's pretty easy to save that as plain text.
If you're a space administrator you can also manually export to HTML or XML.
But it's probably quicker to simply highlight all the text on the page, copy it & paste it into Notepad.
