We have Confluence hosted as a cloud with Atlasssian. I assume as part of hosting, Atlasssian either backs up space/instances in real-time or nightly batch.
How can I restore one space that was deleted?

Unless you have made a backup of the particular space that was deleted, it is not possible to restore it using the Atlassian Backups.
Per our Data storage FAQ:
Point-in-time backups for your instance are taken every 24 hours for the purpose of disaster recovery. Backups are stored at a location separate from the data center. Use of backup data to roll back changes to application data is not supported.
