We have 3 Confluence instances (v 6.15.1) in 3 diferents Linux servers (SLES 15) and we want to migrate and consolidate all of them in a new Confluence instance (v 7.3.2) in a new Linux server (SLES 15 SP1).
Could you tell me how we have to proceed, please?

There are several questions:
1. the current confluence instances are the same or different sizes
2. Is there space with the same name in the individual instances?
Action:
1. xml backup of all 3 confluence instances
2. create a new server and a new database
3. backup of each individual space from the two smallest instances as an xml file
4. https://confluence.atlassian.com/doc/migrating-confluence-between-servers-184150.html
Do this with the largest confluence instance.
5. Restore the individual spaces from the two remaining instances as xml to the new instance (there must be no duplicate space names)
