I can not seem to find the answer in the existing questions.
As an adminstrator of Jira accounts for my team, I would like to change the layout of users name in order to have something clean and regular for everyone:
first name,
name,
e-mail address.

Just for a better understanding of the issue, I would like to know where would you like to show this information. Is this on their profile or personal space? Please, let us know more details.
Also, I would like to clarify that, since the Atlassian account was introduced some years ago, administrators can no longer manage users' information, unless the domain is verified.
Some information like the email address, for example, only the user can choose if they want the email will be visible or not.

thank you for coming back to me.
When I create a new user, I fill in the e-mail address.
But it can come up as just the name, or the full address, or first name and family name...
This is a problem when we want to add a participant as there can be a confusion or trouble to find the person. Here is an example, with "SALOME": we have 3 Salome in the company; 2 girls with Salomé as their first name, and a guy, whose family name is Salome.
When you say "only the user can choose", that means that each user has to amend the layout in thier profile for the "public name" ?

Yes, only they can change this information on their profile. They must go to https://id.atlassian.com/manage-profile/profile-and-visibility to change their full name and public name.
If they are all from the same domain, maybe you can check if it's possible to verify the domain, so administrators would have more control in those cases:
