Can someone from Atlassian walk me through the process of how we would migrate Confluence from the server to the cloud?

You can check on the documentation below how to migrate your Confluence Server to Cloud together with all the steps that should be considered before the migration:

Once you have checked all the pre-migration details (Third-part Apps integration, updated Confluence to the last version available, etc), you can use the free app Confluence Cloud Migration Assistant to easily move content, users, and groups from your Confluence Server to your Confluence Cloud site.

P.S: I suggest you to first run your migration in a test environment to make sure it worked as you expected without missing any of the pre-migration steps.
