I already cancelled the subscription, but I can't delete the organization. When / how can I delete it? the option is there but it's greyed out.

If you have domains associated with your organization, remove them.
If you have apps included in your active subscriptions, remove them.

Its a bit tricky, when its not working after waiting the time frames , you can open a support ticket.
