If I'm using a template, why can't I make it my own and edit things like instructional text?

Surely, if I've copied a template and applied it to one of my pages in a project, I should be free to edit all and any parts of it to suit my needs? e.g. I can't edit the instructional text. I know Instructional text can only be changed when editing a template, but it's not a template anymore, it's a new page with elements from a template? So weird!

For editing templates you actually need to modify the Space or Global Blueprints: https://support.atlassian.com/confluence-cloud/docs/edit-a-template/
