Let's say I am writing a document, as time goes by I add new content, but between a shareable version and the following one I have a version of the document that is clearly unfinished.
Can I choose what version of the document is the one publicly shared?

Welcome to Atlassian community.
Confluence keep history of your changes. If you start editing a page and dont publish thats your draft. Which will be resumed next time when you edit.
You can publish the version which you think is finished and users will be able to view that only.
Page >> Page history. This will display all the versions of the pages. Just choose the one you want to restore and all other changes after that version will be discarded.

Hi, Srinath. Thanks for your answer. It is actually a solution for what I presented. I appreciate it.
This works if I am the only editor, though.
But I think is better than nothing!.
The functionality that we need is to share documents with clients (and for that we need them to be read only and public) and since we continue developing our products, we don't always want to share the very last document until we make the official release of it. (and for that we need to be able to share specific versions other than the last one and be able to edit it by many of us).
But that approach of you is a good one.
