I want to update the restrictions on my confluence documents so that everyone in the space can view but only selected peopel can edit. I thought there is a restrcition option for this like the below:
However for some reason I only see two options:
Could someone help out and let me know why I can't see the option to have everyone view but only selected edit?

In your second screenshot, if you select Open and then Can view, this will give you Anyone in this space can View.
Next, you select Restricted and then add names or groups and then select Can edit. These people/groups will be able to edit (as long as they have the Add permission on pages).
If you only want certain people to be able to view, you can select Restricted, add names, and then select Can view.

There have been some changes to sharing experience. I'd suggest checking out the following article/announcement: Unlocking seamless collaboration: the new Confluence sharing experience
Basically, if you select 'Restricted' options, then you could, for each group/single user, set if they would have view or edit permissions to that specific content.
