We made updates to a space on October 29th and November 21st; however, these updates do not appear on the space, and the history does not reflect any changes on those dates. The last recorded update seems to be from September 20th.
Additionally, the creator of the space is no longer with the organization. Could this be related to the issue?

This could be the case.
But I suggest you to raise an issue at Atlassian Support, then can see more logging based o your instance.
They should be able to provide some more information.
