As an administrator of Atlassian products, in this case Confluence, is it possible to see how often a space is accessed, or which space was last used?
I would like to see the use of confluence across spaces

On the Confluence Cloud Standard Plan, there is no built-in tool to analyze the activities on your spaces and content.
If you do not mind using a 3rd party app you will find here some solutions for your use case.
