I would like to define some fields in a confluence page template, to be used in multiple confluence pages ,  so I can tabulate them into a summary page.  ie. table as follows

page-name1    field-a, field-b etc.

page-name2     field-a, field-b etc

I can do a basic version using page properties/ page properties report, but am  constrained to using date in tables etc, is there another way of doing this.

Many Thanks

Another way is to use Table Excerpt and Table Excerpt Include macros: a single Include macro can pull excerpts from multiple pages by label, for example. Then you can use Table Transformer macro to merge those tables into a single table and perform some other operations. Those macros are included into the Table Filter and Charts app.

You may be able to achieve this using Excerpt and Excerpt Include macroses. First defines the area on a page which can be then re-used on other pages. So you must define one Excerpt on your template page and then refer to it from other pages.
