Am I able to restrict someone to an overall space, and only have them able to access a page within the space and its subset?

It's doable, but has to utilize some combination of space permissions and page restrictions.

One way to do that would be to have the 'someone' included in the permissions of your space, but restrict the home page of that space (or one of its children, depending upon if you wanted them to be able to see the home page or not) to a group or set of individuals that include all those you do want to access the overall space. THEN, create or move a page into 'orphan' category so it is not subject to the inherited restrictions of the home page (you can do this in the tree view of pages in Space Admin, and drag and drop the page above the home page), and include that person in the View restrictions of that page OR if everyone can view it including that 'someone', no restrictions or necessary - it can be linked to for others from a viewable page but the 'someone' would need to be supplied the direct link and then save or favorite it for future access.
