Hello! In Jira, you have a version which is associated with certain issues. I am interested in something similar in Confluence, where you have a Product Version that can be associated with specific versions of a document (technical doc, test procedure, schematic, etc.). Is this possible?

Yes there are. Ussually the documentation that you find from the google is for the latest version version of Confluence. Their URL look something like this.
https://confluence.atlassian.com/display/DOC/Confluence+Documentation+Home
Noticed the DOC in the URL, this means it is the documentation for the latest version of Confluence.
You easily access documentation for other major version of Conlufnece by replac the DOC with something like CONF43.
https://confluence.atlassian.com/display/CONF43/Confluence+Documentation+Home
This is the documentation for the Confluence version 4.3

You can make create documentation and separate each version to a different space. The CONF43 in the URL example is basicly the spacekey for the space.
Also make use of the label in the pages to identify the type of the documentation.

Well, I have another question. Is it best to acheive this by copying the space entirely or to simply copy the pages of interest? Is it possible to copy spaces in Atlassian or is the Copy Space Plugin still our only choice? How does Atlassian do this for their different versions? Thanks!

Copy space plugin is the easiest way to copy your space however you can copy your space as well by replacing the spacekey in the entities.xml of your space xml backup.
