Currently user mentions are not one of the supported macros when creating/editing a page in the Confluence Cloud Mobile App.

We have an existing feature request regarding this, you may refer to below link:

Going forward, should you run into any other missing features that you need, please use the Shake to send feedback feature, which can be enabled from the Settings menu. This way it will send feedback directly to our developers of the app.
