Are you going to have different spaces for each product in Confluence? If so, you should be able to pull in (link) multiple spaces into your JSM's knowledge base.
Additionally, you can have multiple JSM projects (one for each product) and then link to each Confluence space as well.
If you choose to only have 1 Confluence space, but multiple page trees for each product, you just create categories in your JSM knowledge base and you should be able to separate things appropriately.

Yes - it can look like this, for example.
Content is authored in Confluence then the Documentation portal is created using the Scroll Viewport app.
Each tile represents a standalone product.
Using an app like Viewport (other options include Refined, Spacecraft, and Instant Websites) allows you to author and edit content in Confluence and only make it available in your Doc Center when ready.
This is my company doc site built with Viewport utilizing a different approach - individual platform components have their own tile but then open in a single, Confluence like tree.

Ideally I would like to have different spaces for each product - would those be able to have different external link for customers? (Sorry I am new to this and appreciate your response!)

@Lauren Alex is busy on a livestream, so I'll answer. Yes, you can do exactly that. You can set up access permissions per space to allow customers of one space to access only the information relevant to them. Hope this helps.
