My company has some Confluence pages where we limit the viewers/editors via page permissions. However, on some of these private pages, we would also like to hide the list of who has view & edit access from the other viewers on the page.
We do not want a user to see who else has permission to view the page, and we want to hide the page viewing statistics that show up.
Is this possible to do on specific pages?

I believe you could partially get the desired result by configuring space permissions. This would, however, mean that it would affect all content within the space and not just these specific pages.

Again, this is only 'partial' solution as it reflects on all content within the space.
You might want to check if there are any open suggestions related to your requirements > check here (and potentially change filter).
