My company administrator has left the organization and no longer in contact. We do not have access to her details. How can I change the administrator if we can not log on as an administrator?

If your instance only had one org admin and they had left without assigning another account, then the best way is to get in touch with Atlassian Support and they will sort it out for you.
Another possible solution, but it is only applicable if your instance is allowing access to be managed through SCIM or any IAM. You can just simply add the new admin to the registered Org Admin Group and they will be automatically considered as an admin. The only caveat here is that this config should have been established beforehand.
