Changing Text to Something Other than "Normal text" Using Bullets in New Editor

When using bullets in the new editor, it doesn't appear that I can change the text to anything other than "Normal text". Am I missing something?

I would normally revert or recreate using the legacy editor but I can't do that when creating a template so I'm stuck trying to make something work.

I don't know of any way to do this in vanilla Confluence Cloud. 

I wonder if there's an app that could do this though. Karma seems great, but not for templating.
