How can I make a project accessible to anyone with the link, but not visible in the "Spaces" list, without enabling anonymous access at the global level?

When we turned on Anonymous at the global level; projects were visible to users in other spaces.

I don't think you will be able to do this.

If anonymous is on, and enabled on the space, it will show in the spaces list for all users, and not require login for anyone with links to that space.

If anonymous is off, everyone will need to log in. Permissions will need to granted to users to View the space. And once they can view it, it will show up in the Space directory.
