I know that users have the ability to convert pages from the legacy editor to the new editor, but at some point, will Atlassian be converting everything to the new editor automatically? Are there any plans to do so, and if so what is the timing?

Atlassian would not have created a new editor if at some point they didn't plan to drop support for the old editor. Supporting 2 editors indefinitely is not normal.
Right now there isn't feature parity between the old and new, so the old editor will live in its current form for quite some time yet.
When they finally do remove the old editor, you will likely have to convert a page to the new editor format in order to edit the page.

Why did you actually introduce this new editor when it can do less and is more difficult to use than the old one?

Give it time.
It shows great promise - looks really stylish, has some nice layouts built in, but does lack some of the features of the old editor.
It will get better.
