To anticipate the next Confluence version 6 that no longer supports the 'Documentation' theme, we are currently migrating some of our wikis to the 'Global theme'.
After this operation, we would like to disable the Documentation theme, in order to avoid that wiki owners use it again. Is it possible to disable / deactivate? How?

Themes, including the off-the-shelf ones, are implemented as add-ons.
You should be able to go into admin -> manage add-ons and select the list of "system" add-ons (system means "critical add-ons plus the ones distributed as part of the baseline confluence software"), and find the documentation theme add-on. You should be able to disable it.
I wouldn't recommend turning it off until you've swapped all your existing spaces over to the global theme though. In theory, they should default to the global theme if the current theme is turned off, but you may see errors if you just turn it off.
