Right now, anonymous users can leave comments on our public wikis, but we have no way to reach out to them with answers since they aren't even presented with a field for them to enter their name and email.
How can we force them to input their name and email ?
Bonus points : Ideally, their email would only be visible to registered users or administrators.
@Daniel Laberge There is a way to do what you want, but it would require using another application. Do you have an enterprise-grade feedback application (e.g. survey software)? If you do, the wiki page can have a link to a specific short survey that just has fields for name, email address and comments. DOWNSIDE: the public wouldn't see the comments (though that can be a good thing at times).
OR, you could 'MacGyver' (not sure if you know of this old American TV show) things a bit, and allow comments from anon users, but offer a link for folks to enter their name and email address only in the form IF they wish you to get back with them. Then when contacted back via email they can be asked what their comment is or perhaps the time of their form input can be aligned with the time of their comment if there aren't too many.
If you don't have a survey tool or want a more elegant solution, perhaps a Confluence plugin designed for form entry such as Confiforms or frevvo is a consideration. .
You'll need to get them to register as users, and disable anonymous comments.

There's no way to force people to enter anything in your wiki, accounts are the only real option.
