I realised that each watcher on the space received an individual email for each file that is added/removed.

Rather than clicking on the blue publish button if you click on the… and select publish without notifying watchers that should achieve your goal.

Welcome to the community! There are two ways to publish without notifying watchers. Above is option one.
Option two is when you are in edit mode. On the bottom of the right side of the page, you have this screenshot below. Make sure the box is checked for "Notify watchers". Take care

@Robert Pineres , I believe that screen shot is from Server maybe? Cloud used to look like that but has changed, at least for me.
