Growing Team VS. Enterprice Team. What is? How to define what we a team? Whether it is possible to update products in case of a on-time payment?

just try to figure out if you will need to upgrade the number of user in the next 12 months. Could be smarter to buy for one level higher than you actually need by now. Anyway: have a look at the FAQ here https://de.atlassian.com/licensing/purchase-licensing. Pick the product and compare price you have to pay now to the price you would have to pay for an upgrade.
And make sure you do renew your software maintenace every year to get all the updates. I would highly recommend this.

The sizing there is just what Atlassian use for a general way to group up numbers of users. Enterprises are large organisations, small teams a handful of co-workers, and growing teams are for small, but hopefully growing teams.
The easy answer is to just look at the number of people who will be using it and select the right tier for you (for Confluence bear in mind that you can allow some access without counting as a user - common for documentation sites who let anyone read it and only licence the people who write the docs).
If you buy a low number now and your team grows, you can jump up to the next tier at any time by paying the difference.
