As we are using blogs to inform collegues what's going on in different Space, we'd love to optimize the list output of blog posts.
1. If a blog entry contains a picture, the (first) picture shall be included in the blog list view as a preview to gain readers attention. Embeede or linked pictures shouldn't be shown as a textpreview linke "hereisapicture.jpg" as it's not reader friendly or helpful.
2. Is there a way a blog contributor can write an short text introduction beside its origin blog post - maybe even including a preview picture - to have control what will be shown as preview to readers in blog lists?

You can try the Handy Cards macro (one of the Handy Macros for Confluence app) which completely meets your requirements.
You can add cards-page previews automatically (using the first image and the specified number of characters) or by adding custom content to the Excerpt macros placed within the pages you're going to display or to the Handy Card Content macros placed directly on the page where you want to aggregate page previews.
Check the marketplace - there are some apps that enhance the blogging experience on the server edition of Confluence. I've also built an app that does something similar, but its for Confluence Cloud only.
