I have a template that I created. When used, it creates a new page.
I'd like, instead to put the "create from template" button on a page, and always have the new additions to the template appended to the bottom of that page, like a running log, rather than make new pages. After a while, new pages becomes unwieldy when you are posting 3-4 of them a day.
How can I do this?
Not really.
Whenever a template is used, it creates a new page. This gets quickly unwieldy if you use that template 6 times a day, because you rapidly end up with a bunch of pages. After a month, that's 180 pages.
Instead of creating so many pages, I'd like to just create a running log, so that information is always appended to the bottom of a single page until I decide to make a new page. That way, instead of 6 pages in one day made from the template, I could make just one.

As far as I know there is no out-of-the-box feature that will support your use case. If you are using a blueprint or template then always a new page is created.
What you can achieve with tools is to use some multi-excerpt feature. With this solution you would still have a new page whenever you click on the create button, but you can list the contents of these pages on one single page.
Maybe you can implement this feature using a user macro. Our you would need to write an a plugin (aka add-on). See for example How can I append a string to a wiki page on confluence?
Unfortunately I don't know such a tool since my favorite approach is to have each piece of information on a separate page to make it referable. Hopefully there is someone in the community who can recommend a third-party tool that would do what you need for your task.

I'm not sure if I understand your question correctly. I would assume that the pages are listed by a macro like the Content By Label Macro. With this macro you can control whether the listing is reversed or not.
To do this show the options in the macro and select 'creation' for the 'Sort By' parameter. Then click the checkbox for 'Reverse Sort'.
