I'm looking to upgrade our Confluence from 6.7.1 to a new version, but it seems there's multiple streams of Confluence out there. I say this because 6.15.1 released 13 March, but there's been several resales of 'lower' versions (6.6.x and 6.12.x - 6.14.x) released since then.
How stable and bug-free is the latest version (6.15.2)? Would I be better off with an older version, since I'm currently on an old version (6.7.1)?

The answer can be multiple. It will depend on the frequency of Confluence update you intend to do during the coming year.
Due to the fact you are in version 6.7.1, you are not upgrading your version each year. The version 6.7.1 has been released in Feb 2018.
That's why the best for you in term of maintenance should be an Enterprise version. In your case the 6.13.x.
The Entreprise version is a major version for which Atlassian will deliver bug fixing and security patches for 2 years, starting on the day of the delivery of the X.Y.0. The feature and look and feel will remain the same and the add-ons compatibility maintain. This will facilitate any Security Patch upgrade to perform.
